zucchini bread

Ingredients:
1 ½ cups all-purpose flour
¾ cup granulated sugar
2 ¼ tsp baking powder
½ tsp salt
¼ tsp ground nutmeg
¾ cup zucchini, peeled and diced (1/2 zucchini)
½ cup vegetable oil
2 large eggs
1 tsp grated fresh lemon peel
Instructions:
Preheat oven to 350 degrees. Grease one 8 ½ in by 4 ½ in loaf pan. Set aside.
In a large bowl, stir together flour, sugar, baking powder, salt, and nutmeg until combined. Add the zucchini and stir until coated and incorporated.
In a small bowl, beat together oil, eggs, and lemon peel. Make a well in your flour mixture and pour into the well. Stir the liquid ingredients into the flour mixture until moistened and thoroughly combined.
Transfer batter to the prepared loaf pan and spread out evenly. Bake for 45-50 minutes or until toothpick inserted in center comes out clean. Remove from oven and allow to cool in pan for 10 minutes. Remove from pan and allow to cool completely before slicing. Makes 1 loaf.
