shrimp & avocado

Ingredients:
1 lb raw fresh extra large shrimp, peeled, deveined, and tails off
7 fresh limes, divided
2 fresh avocados, peeled and diced (2 cups)
1 fresh jalapeno pepper, seeded and diced (¼ cup)
¼ cup fresh chopped cilantro
½ tsp salt
¼ tsp ground black pepper
Directions:
Dice the shrimp and add to a large bowl. Squeeze 6 limes into the bowl to cover the shrimp. Toss to combine. Cover the bowl with plastic wrap and set in the refrigerator to marinate for 4 hours.
After 4 hours, drain the shrimp from the lime juice. Heat a medium frying pan on medium low heat. Add the shrimp and sauté, stirring occasionally, for about 5-7 minutes or until they turn pink and opaque.
Meanwhile, in a large bowl, mix the diced avocado with the juice of 1 lime. Add the jalapeno, cilantro, salt, and black pepper and stir to evenly incorporate. Add the cooked shrimp and toss to combine. Serve immediately. Serves 8.
