apple coffee cake

Ingredients:
½ cup salted butter, plus 1 tbsp for greasing pan
1 cup granulated sugar
2 large eggs
2 tsp vanilla, divided
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
2 apples, peeled, cored, and diced (2 cups diced)
1 cup sour cream
1 cup powdered sugar
2 tbsp buttermilk
Instructions:
Preheat oven to 350 degrees.
In a large mixing bowl with an electric mixer on medium-high speed, beat the butter and sugar together until it is creamed and completely combined. Add the eggs and 1 tsp vanilla and beat until fully incorporated.
In a separate large mixing bowl sift the flour. Add the baking powder, baking soda, and salt, and stir to combine.
Add ⅓ of the flour mixture to the creamed butter and fold together until completely dissolved. Add ½ cup of the sour cream and fold in until completely incorporated. Add ⅓ of the flour mixture again folding in until completely dissolved. Add the remaining ½ cup of the sour cream and fold in until completely incorporated. Add the remaining ⅓ of the flour mixture and fold in until completely dissolved. The batter should be thick and smooth. Add the apples and fold into the batter until evenly combined.
Grease a loaf pan with butter. Transfer batter to the loaf pan. Bake for 40 minutes or until a toothpick comes out clean. Allow to cool before adding the glaze.
While the cake is cooling, make the glaze. In a small bowl whisk together the powdered sugar, 1 tsp vanilla, and the buttermilk until it is completely combined and you can form a drizzle. Once the cake is cooled, loosen the sides with a butter knife and flip it upside down onto a plate. Tap the bottom with the knife until the cake feels loosened from the pan and lift the pan away from the cake. Flip the cake right side up and drizzle the glaze over the top with a spoon. Slice and serve.
