apple brown butter walnut muffins

Ingredients:

½ cup salted butter, plus 1 tbsp for greasing tins

½ cup chopped walnuts

3 ½ cups all-purpose flour

1 ½ cup granulated sugar

½ cup light brown sugar

1 tsp salt

1 tsp baking soda

1 tsp ground cinnamon

3 cups diced fresh apples, peeled and cored (3-4 apples)

1 cup unsweetened applesauce

1 tsp pure vanilla

Directions:

Preheat oven to 350 degrees.

Melt ½ cup of the butter in a medium sauté pan on the stove top on low heat. Once melted, add the walnuts and stir constantly to lightly brown, about 3 minutes. Remove from heat once the butter is a light caramel color and foaming along the top surface. Transfer the butter and walnuts to a bowl and set aside.

In a large mixing bowl, stir the flour, sugars, salt, baking soda, and cinnamon to combine. Add the diced apples and stir to evenly incorporate. Make a well in the dry mixture and pour in the butter and walnuts, applesauce, and vanilla. Gently fold the wet ingredients into the dry ingredients until all of the dry ingredients are absorbed and forms a batter. The batter will be sturdy.

Prepare 2-one dozen muffin tins by greasing the cups with the remaining 1 tbsp of butter. Fill each greased cup with batter about ⅔ full. Bake about 25 min or until toothpick comes out clean.

Makes 2 dozen muffins.
